December mornings are not characterized only by the cold, but also by the holidays and the delicious food prepared during this period.
Especially sweets, or more precisely soft butter cookies, which are wonderful to enjoy at any time of the day.
Christmas lemon cookies, also known as Albert Cookies, have Danish origins and are perfect to enjoy during the holiday season. They are served with a white lemon glaze that balances the sweet and slightly bitter flavors.
Ingredients
3 eggs
250 g sugar
125 g butter
500 g flour
110 g starch
Vanilla
3 teaspoons baking powder
For the decoration
Powdered sugar
Lemon juice
Preparation
To begin preparing this recipe, it is recommended to choose a deep bowl. Beat the eggs with the sugar and slowly add the softened butter.
Then add the flour, starch, and baking powder. To form the dough more easily, use a wooden spoon. Cover the dough with plastic wrap and let it rest in the refrigerator for 1 hour.
After the resting time, roll out the dough into a thick sheet about 1 cm thick and cut it using your favorite cookie shapes. Place the cookies on a baking tray lined with parchment paper and put them in a preheated oven at 180°C.
They will need only 20 minutes to bake. Once baked, the final step is to decorate them with a glaze made by mixing powdered sugar and lemon juice.
